 p>\n<p>Like to cook? Join us for Chef Theresa's International Cuisine Seri
 es. Ingredient list will be posted a few weeks before each session.</p>\n<
 p>Ingredients to have on hand:</p>\n<p>DOUGH:<br />2 large eggs<br />1/4 c
 up water<br />1/2 teaspoon salt<br />2 cups all-purpose flour</p>\n<p><br 
 />FILLING:</p>\n<p>1 large egg<br />1 teaspoon salt<br />1/2 teaspoon suga
 r<br />Dash pepper<br />1 carton (15 to 16 ounces) soft farmer cheese or w
 hole-milk ricotta cheese<br />1 to 4 tablespoons butter\, divided<br />Sou
 r cream\, optional</p>\n<p><br />Directions<br />In a large bowl\, make a 
 well with the flour\, crack eggs\, water and salt until blended\; stir in 
 flour. Transfer to a lightly floured surface\; knead 10-12 times\, forming
  a firm dough. Cover with plastic wrap and let rest 10 minutes.â€¨For 
 filling\, in a small bowl\, whisk egg\, salt\, sugar and pepper. Stir in c
 heese.â€¨Divide dough into 4 portions. On a lightly floured surface\, 
 roll each portion to 1/8-in. thickness\; cut with a floured 4-in. round co
 okie cutter. Place 1 tablespoon filling in center of each circle. Moisten 
 edges with water\; fold in half and press edges to seal. Repeat with remai
 ning dough and filling. â€¨In a 6-qt. stockpot\, bring water to a boil
 . Add pierogi in batches\; reduce heat to a gentle simmer. Cook until pier
 ogi float to the top and are tender\, 2-3 minutes. Remove with a slotted s
 poon.â€¨In a large skillet\, heat 1 tablespoon butter over medium-high
  heat. Add pierogi in batches\; cook until golden brown\, 1-3 minutes on e
 ach side\, adding additional butter as necessary. If desired\, serve with 
 sour cream.</p>\n<p>Equipment:<br />2 bowls<br />1 large pot<br />1 large

  Jeremiah&rsquo\;s catering and cooking studio in Parsippany. She started 
 at the young age of 13 working in restaurants. Achieving ownership at age 
 24 Theresa opened Jeremiah&rsquo\;s cafe and catering. For the last 23 yea
 rs Theresa has prepared\, catered and taught for her community. Jeremiah&r
 squo\;s Catering offers cooking classes created especially for children. T
 heresa holds these classes and teaches children how to cook healthy meals 
 for themselves. Of course\, everything is made to be safe for children and
  Theresa is extremely patient and pays attention to each child in her clas
 s. She chooses easy\, yet healthy\, recipes for the children and does her 
 best to stir in them the joy and happiness of making tasty food. The whole
  idea is to help the children acquire new skills\, enjoy group activities\
 , and teach them all about healthy foods. And Theresa does this with a lot
