  day before the event.</p>\n<p>If you are going to cook along with Chef Th
 eresa\, please have your ingredients measured out and chopped\, if necessa
 ry\, in advance and all your materials ready!</p>\n<p><strong>Chinese scal
 lion pancakes</strong><br /><em>Ingredients</em><br />3 cups all-purpose f
 lour<br />1-1/3 cups boiling water<br />4 teaspoons sesame oil<br />6 gree
 n onions\, chopped<br />1 teaspoon salt<br />1/2 cup canola oil</p>\n<p><b
 r />Dipping Sauce:</p>\n<p>3 tablespoons reduced-sodium soy sauce<br />1 t
 ablespoon brown sugar<br />2 teaspoons minced fresh gingerroot<br />2 teas
 poons rice vinegar<br />1/2 teaspoon sesame oil<br />1/8 teaspoon crushed 
 red pepper flakes</p>\n<p>Directions<br />Place flour in a large bowl\; st
 ir in boiling water until dough forms a ball. Turn onto a floured surface\
 ; knead until smooth and elastic\, 4-6 minutes. Place in a large bowl\; co
 ver and let rest for 30 minutes.â€¨Divide dough into 8 portions\; roll
  each portion into an 8-in. circle. Brush with 1/2 teaspoon sesame oil\; s
 prinkle with 1 heaping tablespoon of green onion and 1/8 teaspoon salt. Ro
 ll into a thin cylinder (jelly-roll style)\; starting at one end\, twist c
 ylinder onto itself forming a coil\, pinching to seal. Flatten slightly. R
 oll each coil to 1/8-in. thickness.â€¨In a large skillet\, heat 1 tabl
 espoon canola oil. Over medium-high heat\, cook 1 pancake at a time until 
 golden brown\, 2-3 minutes on each side.â€¨Meanwhile\, in a small bowl
 \, combine sauce ingredients. Serve with pancakes.</p>\n<p>Equipment:<br /

  successful owner and chef of Jeremiah&rsquo\;s catering and cooking studi
 o in Parsippany. She started at the young age of 13 working in restaurants
 . Achieving ownership at age 24 Theresa opened Jeremiah&rsquo\;s cafe and 
 catering. For the last 23 years Theresa has prepared\, catered and taught 
 for her community. Jeremiah&rsquo\;s Catering offers cooking classes creat
 ed especially for children. Theresa holds these classes and teaches childr
 en how to cook healthy meals for themselves. Of course\, everything is mad
 e to be safe for children and Theresa is extremely patient and pays attent
 ion to each child in her class. She chooses easy\, yet healthy\, recipes f
 or the children and does her best to stir in them the joy and happiness of
  making tasty food. The whole idea is to help the children acquire new ski
 lls\, enjoy group activities\, and teach them all about healthy foods. And
  Theresa does this with a lot of dedication and enthusiasm.</p>\n<p>Octobe
