 he event.</p>\n<p><strong>If you are going to cook along with Chef Theresa
 \, please have your ingredients measured out and chopped\, if necessary\, 
 in advance and all your materials ready!</strong></p>\n<p>Calgary Nanaimo 
 Bars - Recipe</p>\n<p><em>Ingredients</em><br />1/4 cup sugar<br />1/4 cup
  baking cocoa<br />3/4 cup butter\, cubed<br />2 large eggs\, beaten<br />
 2 cups graham cracker crumbs<br />1 cup sweetened shredded coconut<br />1/
 2 cup chopped almonds\, optional<br />FILLING:<br />2 cups confectioners' 
 sugar<br />2 tablespoons instant vanilla pudding mix<br />1/4 cup butter\,
  melted<br />3 tablespoons 2% milk<br />GLAZE:<br />3 ounces semisweet cho
 colate\, chopped<br />1 tablespoon butter</p>\n<p>Directions<br />Line an 
 8-in. square baking pan with foil\, letting ends extend over sides by 1 in
 . In a large heavy saucepan\, combine sugar and cocoa\; add butter. Cook a
 nd stir over medium-low heat until butter is melted. Whisk a small amount 
 of hot mixture into eggs. Return all to the pan\, whisking constantly. Coo
 k and stir until mixture reaches 160&deg\;. Remove from heat.â€¨Stir i
 n cracker crumbs\, coconut and\, if desired\, almonds. Press into prepared
  pan. Refrigerate 30 minutes or until set.â€¨For filling\, in a small 
 bowl\, beat confectioners' sugar\, pudding mix\, butter and milk until smo
 oth\; spread over crust.â€¨In a microwave\, melt chocolate and butter\
 ; stir until smooth. Spread over top. Refrigerate until set. Using foil\, 
 lift bars out of pan. Discard foil\; cut into bars.</p>\n<p>Theresa Navarr
 o is a successful owner and chef of Jeremiah&rsquo\;s catering and cooking
  studio in Parsippany. She started at the young age of 13 working in resta
 urants. Achieving ownership at age 24 Theresa opened Jeremiah&rsquo\;s caf
 e and catering. For the last 23 years Theresa has prepared\, catered and t
 aught for her community. Jeremiah&rsquo\;s Catering offers cooking classes
  created especially for children. Theresa holds these classes and teaches 
 children how to cook healthy meals for themselves. Of course\, everything 
 is made to be safe for children and Theresa is extremely patient and pays 
 attention to each child in her class. She chooses easy\, yet healthy\, rec
 ipes for the children and does her best to stir in them the joy and happin
 ess of making tasty food. The whole idea is to help the children acquire n
 ew skills\, enjoy group activities\, and teach them all about healthy food
 s. And Theresa does this with a lot of dedication and enthusiasm.</p>\n<p>
