  Butterballs</strong></span></p>\n<p>Ingredients:</p>\n<p>16 tablespoons (
 2 sticks) unsalted butter\; softened</p>\n<p>1/2 cup confectioners' sugar\
 , plus about 1 1/4 cups for</p>\n<p>&nbsp\;coating the cookies</p>\n<p>2 t
 easpoons vanilla extract</p>\n<p>1/4 teaspoon salt</p>\n<p>2 1/4 cups all-
 purpose flour</p>\n<p>3/4 cup finely chopped pecans</p>\n<p><strong>Direct
 ions:</strong></p>\n<p>*Beat the butter in a large bowl until creamy.&nbsp
 \; Add 1/2 cup of the&nbsp\;</p>\n<p>confectioners' sugar and beat until s
 mooth.&nbsp\; Beat in the vanilla and</p>\n<p>salt.&nbsp\; With the beater
 s on low speed\, mix in the flour just until</p>\n<p>incorporated.&nbsp\; 
 Mix in the pecans.&nbsp\; Using your hands\, gather the&nbsp\;</p>\n<p>dou
 gh into a ball inside the bowl\, cover the bowl with plastic and</p>\n<p>r
 efrigerate for about 30 minutes.&nbsp\;&nbsp\;</p>\n<p>*Preheat oven to 37
 5 degrees.&nbsp\; Line 1-2 cookie sheets with parchment</p>\n<p>paper.</p>
 \n<p>*Pinch off small clumps of dough and roll into 1-inch balls\,&nbsp\;<
 /p>\n<p>arranging them about 1 1/2 inches apart.&nbsp\; Bake for 11-12 min
 utes\,</p>\n<p>or until the cookies are lightly golden o the bottom and ju
 st barely</p>\n<p>beginning to color on top.&nbsp\; Let the cookies cool o
 n the cookie sheet</p>\n<p>for about 5 minutes.</p>\n<p>*Place the remaini
 ng 1 1/4 cups of confectioners' sugar in a shallow bowl.&nbsp\;&nbsp\;</p>
